1. Avocado Sandwich
1. Thin avocado slices
2. Italian salad dressing
4. Whole wheat bread
5. Thin tomato slices
6. Alfalfa sprouts
7. American cheese
1. Toss avocado with Italian dressing.
2. Spread mayo on 1 slice of bread.
3. Top bread slice with tomato, avocado, cheese and alfalfa sprouts.
4. Cover with the other slice and drizzle with Italian dressing. Serve immediately.
Mexican Black Bean Salad
1 1/2 cups cooked black beans
3 green onionssliced
2 ripe plum tomatoes, diced
1/3 cup corn, fresh, frozen or canned
2 tablespoons olive oil
1 tablespoon fresh lime juice
2 tablespoons freshly chopped cilantro
salt and freshly ground black pepper to taste
minced garlic and/or hot peppers may be added for an extra zesty flavor
